The Paris-Brest

The French Invented the (Edible) Wheel? The Story of the Paris-Brest

For the uninitiated sweet-tooth, the Paris-Brest could be compared to a variety of objects. Some might say it takes the shape of a sparkling wreath. Others might think it has the appearance of a dazzling golden bracelet. And yes, there are those who would say the Paris-Brest looks just like a fancy cheese-filled bagel. Despite this dessert’s eye-catching shape and unique design, the Paris-Brest boasts the classic combos of crème and crunch.

Where did the Paris-Brest come from?

In 1910, Chef Louis Durand was tasked with creating a dessert for the Paris-Brest bicycle race. His goal was to create a pastry in the shape of a bike wheel, and the Paris-Brest was born. Durand’s creation commemorates the bicycle race and can be found in boulangeries all over France.

So what’s in a Paris-Brest?

The basic ingredients of this special dessert are:

Choux pastry: this kind of pastry is very light and delicate. You can also find it in éclairs and profiteroles.

Butter

Whole Milk

Sugar (and more for sprinkling on top!)

Eggs

Almond flakes: this is the classic topping, but you can experiment with your own flavors!

Praline Crème Mousseline: a delicious hazelnut-flavored cream

This edible wheel will drive you crazy!

Of course—like most French sweets—assembling the Paris-Brest is not so simple. That’s why we’ve done the work for you! Enjoy the authentic tastes and textures of this special dessert in your own home. Not responsible for messy fingers!
